i felt that i should share my experience and feelings regarding the Galaxy Note 7 Recall. I am a Verizon customer, so I can't speak for the other networks unfortunately. I hope you find this video helpful.
*EDIT*
if you elect to choose a different phone for the time being until your Note 7 replacement is ready, the restocking fee is waived until November 24th. (thanks Wavester64!)

how i back up my apps:
Helium (makes a folder called 'carbon,' which is why i was confused) Courtesy of CLOCKWORK Mod
** saves app data and/or whole apps, texts, call logs and phone settings
SMS Backup/Restore
**saves text messages/MMS messages
